  • 1 baguette sliced into 10 pieces
  • 2 –4 tbsp extra virgin olive oil
  • Flaky sea salt to taste
  • Pinch of salt
  • Pinch of black pepper
  • 1 cup whole milk ricotta cheese
  • 1 –2 tbsp roasted and salted pistachios crushed
  • Honey for drizzling
  • Fresh lemon zest for garnish

Instructions
 

  • Slice the Baguette: Begin by slicing the baguette into ten pieces at a slight diagonal.
    This angle creates larger, more elegant pieces that hold toppings better and provide a visually appealing presentation.
    Place the slices on a clean cutting board, ready for grilling.
  • Prepare for Grilling: Brush both sides of each baguette slice lightly with 2–4 tablespoons of extra virgin olive oil.
    Make sure every surface is coated to enhance browning and create a crispy texture while grilling.
  • Grill the Baguette: Heat a grill pan or ribbed cast iron skillet over medium-high heat. Place the slices on the hot surface and grill for 1–2 minutes per side.
    Watch closely to avoid burning, and rotate if needed to achieve even grill marks and a golden-brown finish.
  • Season the Toast: Once grilled, transfer the baguette slices to a serving board or platter.
    Sprinkle lightly with flaky sea salt to enhance flavor and bring out the natural taste of the bread and toppings.
  • Whip the Ricotta: In a small mixing bowl, combine 1 cup of whole milk ricotta, a pinch of salt, and black pepper.
    Use a hand mixer or stand mixer on medium speed for 1 minute until smooth, creamy, and slightly airy.
    This ensures easy spreading and a luxurious texture.
  • Assemble the Toast: Spread a generous layer of whipped ricotta onto each grilled baguette slice.
    Top with 1–2 tablespoons of crushed roasted pistachios, drizzle with honey to taste, and finish with a small sprinkle of fresh lemon zest for brightness and aroma.
  • Serve and Enjoy: Arrange the assembled toasts on a serving platter.
    Serve immediately while the bread is warm and the ricotta is creamy.
    These toasts are perfect as an appetizer, brunch treat, or light snack, offering a combination of sweet, salty, nutty, and tangy flavors in every bite.
