Fritters:
- 1/4 cup all-purpose flour
- 1/4 cup breadcrumbs
- 1/4 cup shredded cheese cheddar, mozzarella, or parmesan
- 1 tbsp seasoning blend garlic powder, paprika, or everything bagel mix
- 1 tbsp fresh chives chopped (or 1 tsp dried chives)
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 – 15.25 oz can whole kernel sweet corn drained and patted dry (~1 1/2 cups)
- 1 large egg beaten
- Cooking spray as needed
Maple Aioli:
- 1/4 cup plain Greek yogurt
- 1/4 cup light mayonnaise
- 2 tbsp lemon juice
- 1 tbsp pure maple syrup
- 1 tsp minced garlic about 1 clove
- 1/2 tsp smoked paprika
- Salt and pepper to taste

Shape the Fritters: Using clean hands, scoop and form the batter into 8 evenly sized portions. If the batter feels crumbly, first roll into a small ball, then gently press it flat into the patty shape. Preheat the Air Fryer: Turn on your air fryer and set it to 370°F (185°C), allowing it to preheat for about 2 minutes. Lightly spray the basket with cooking spray or line it with parchment paper to prevent sticking. Preheating ensures the fritters start cooking immediately, promoting a golden, crispy exterior.
