Ingredients
  

  • 3 fresh ears of corn
  • 2 tablespoons olive oil or dairy-free butter melted
  • 1 teaspoon smoked paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon liquid smoke optional, for smoky flavor
  • A pinch of salt
  • Water for boiling

Method
 

  1. Prepare and Soften the Corn: Start by removing the husks and silky threads from the ears of corn. Place the corn in a large pot filled with boiling water and cook for about 3 minutes. This short boiling softens the corn slightly and makes it easier to handle later. Once done, immediately transfer the corn to a bowl of cold water or run under cold tap water for about 45 seconds to cool and stop the cooking process.
  2. Slice Corn Into Ribs: Place each cooled ear of corn on a clean cutting board. Trim off the ends to create a flat base. Stand the corn upright and carefully slice lengthwise through the middle using a sharp chef’s knife. Then, cut each half into quarters or smaller “rib” sections based on your preference for size.
  3. Prepare the Marinade: In a small bowl, whisk together the olive oil or melted dairy-free butter, smoked paprika, garlic powder, salt, and optional liquid smoke. This marinade adds a rich, savory flavor to the corn ribs.
  4. Season and Arrange the Corn: Brush each corn rib generously with the marinade, making sure to coat all sides evenly. Use your hands if preferred to rub the mixture thoroughly onto the corn. Arrange the coated ribs in a single layer inside the basket of your air fryer to ensure even cooking.
  5. Air Fry to Crisp Perfection: Set your air fryer to a high temperature (around 400°F / 200°C) and cook the corn ribs for 10 to 12 minutes. Shake or turn the ribs halfway through cooking to promote even crisping. The corn should be tender on the inside with a deliciously crispy exterior.
  6. Serve and Enjoy: Remove the corn ribs from the air fryer and serve immediately. For a fresh touch, squeeze some lemon or lime juice over the top and pair with your favorite dipping sauce for extra flavor.

Notes

  • Liquid Smoke Substitute: If you don’t have liquid smoke, smoked paprika alone still delivers a lovely smoky note.
  • Size Variations: Feel free to cut the corn ribs thicker or thinner depending on your desired crunchiness. Thinner ribs crisp faster.
  • Storage: Leftover corn ribs are best eaten the same day but can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in the air fryer for best texture.
  • Customization: Experiment with different spice blends such as chili powder, cumin, or nutritional yeast for varied flavors.
