Method
 

  1. Prepare the Banana Slices: Line a baking sheet with parchment or wax paper. Peel the bananas and slice them into even rounds, about ½ inch thick. Arrange the slices in a single layer on the lined baking sheet, making sure they don't touch. Place the tray in the freezer and allow the slices to freeze solid, about 1 hour. This step ensures the banana bites maintain their shape when dipped in warm chocolate.
  2. Melt the Chocolate Mixture: In a microwave-safe bowl or glass measuring cup, combine the dark chocolate chips and coconut oil. Microwave the mixture in 30-second intervals, stirring thoroughly between each burst, until the chocolate is completely melted and smooth. Allow it to cool for a minute or two to thicken slightly—this helps the coating cling better to the bananas.
  3. Dip the Frozen Bananas: Remove the frozen banana slices from the freezer. Using a fork or dipping tool, carefully lower each banana slice into the melted chocolate, ensuring all sides are fully coated. Lift the slice out of the chocolate, gently tap off any excess, and return it to the parchment-lined baking sheet.
  4. Freeze the Dipped Bites: Once all the slices have been dipped and arranged on the sheet, place the tray back into the freezer for at least 30 minutes, or until the chocolate shell is firm.
  5. Serve and Store: Enjoy the banana bites directly from the freezer for a crisp, cool treat. Alternatively, you can let them soften slightly in the fridge for 5–10 minutes before serving for a creamier texture. Avoid letting them thaw completely, as this will cause the bananas to become mushy under the chocolate shell.
