  • 2 tablespoons honey or agave syrup
  • ¼ cup full-fat plain yogurt 2 oz / 57 g
  • ½ tablespoon fresh lemon juice
  • 2 tablespoons toasted coconut flakes

Method
 

  1. Prepare the Ingredients: Gather your frozen pineapple chunks, full-fat yogurt, honey (or agave), fresh lemon juice, and toasted coconut flakes.
    Make sure the pineapple is well frozen to help create a creamy texture quickly.
    If using fresh pineapple, note that freezing time will increase.
  2. Blend the Base: Add the frozen pineapple, honey, yogurt, and lemon juice to your food processor.
    Blend everything for 2 to 3 minutes, stopping occasionally to scrape down the sides with a spatula to ensure an even, smooth mixture free of lumps and chunks.
    Continue blending until the yogurt is silky and creamy.
  3. Fold in the Coconut: Once blended, gently fold in the toasted coconut flakes using a spatula.
    This will add a pleasant crunch and a boost of coconut flavor throughout the frozen yogurt without breaking the creamy texture.
  4. Freeze the Yogurt: Transfer your creamy mixture to an airtight, freezer-safe container.
    Seal tightly and place it in the freezer for at least 6 hours to set fully, though overnight freezing is best for optimal firmness and flavor blending.
  5. Serve and Enjoy: When ready, scoop the frozen yogurt into bowls or cones.
    Let it sit at room temperature for a few minutes before serving to soften slightly for easier scooping.
