Ingredients
  

  • 2 medium zucchinis sliced ~¼ inch thick
  • 3 –4 cloves garlic minced
  • cup parmesan cheese grated
  • 1 tablespoon olive oil
  • Pinch of salt and black pepper
  • Juice of ½ lemon
  • ¼ cup fresh basil chopped

Method
 

  1. Preheat the Oven: Begin by setting your oven to 425°F (220°C) to ensure it reaches the perfect roasting temperature while you prepare the zucchini.
    This high heat helps achieve golden, slightly crispy edges while keeping the interior tender and juicy.
  2. Prepare the Zucchini: Wash and dry the zucchinis thoroughly, then slice them into even ¼-inch thick rounds to ensure uniform roasting.
    Consistent slicing prevents some pieces from overcooking while others remain underdone, giving a perfectly tender texture throughout.
  3. Mix the Seasonings: In a large mixing bowl, combine the sliced zucchini with minced garlic, grated parmesan, olive oil, salt, and pepper.
    Toss everything gently but thoroughly so each piece is evenly coated, allowing the flavors to meld and the parmesan to stick for a crispy, golden finish.
  4. Arrange on the Sheet Pan: Line a sheet pan with parchment paper to prevent sticking, then spread the seasoned zucchini in a single layer.
    If any leftover garlic or parmesan remains in the bowl, sprinkle it over the top for extra flavor and a beautiful roasted appearance.
  5. Roast the Zucchini: Place the sheet pan in the preheated oven and roast for 20–30 minutes, flipping the slices halfway through to ensure even browning.
    Keep an eye on the zucchini toward the end; it should be tender, slightly caramelized, and lightly golden around the edges.
  6. Add Fresh Basil and Serve: Once roasted, remove the zucchini from the oven and immediately drizzle with fresh lemon juice, then sprinkle chopped basil over the top.
    Serve warm as a flavorful side dish that pairs beautifully with any main course, offering a satisfying, nutritious bite every time.
